=BARRY GOLD'S COD=

==Ingredients==
3/4 Lb. Cod (sold in th supermarket as fresh, wild)
2 potatoes
1½ onions
olive oil spray
paprika
parsley flakes
pepper
salt to taste

==Directions==
Slice potatoes and onions very thin. (Cuisinart, 2mm slicing blade)
Sprinkle generously with paprika and parsley flakes
Grind black pepper
Optional salt. 
(Fill one hand with parsley flakes, rub between hands to powder.  Repeat about 4-5 times.)
Toss all this together.  Potatoes/onions should be well coated.  Add more paprika & parsley if needed.

Take large oval baking dish, spray bottom with olive oil spray.  
Add potato mixture in layers, spraying each layer with olive oil spray (4-6 layers).  
Grind pepper on top, optional salt.
MICROWAVE 30 minutes, stirring every 6 minutes.

Dust cod with paprika, powdered parsley, optional salt.
Put the cod on top of the potato & onion mix.
Bake at 350°F until done, 30-35 minutes.

When done, the potatoes taste a little bit mushy and not "al dente", and the cod is flaky and not mushy.
